Thomas's journey
Thomas graduated with highest honors from the Jean-Jacques Despaux pizzaiolo school in Lannemezan in 2016. He honed his craft at Le Vésuve in Chartres, before settling in La Rochelle where he worked for fourteen years at Le Rigoletto. Today he makes his own pizzas at Hangar 27, handmade and cooked to order.
